The reason for that split is lauric acid. Coconut oil is unusually high in it, and lauric acid has a small, straight molecular shape that lets it move into the hair shaft rather than resting on the surface. For most people that means genuinely less protein loss during washing. For a minority, particularly those with protein-sensitive or high porosity hair, the same property makes hair feel stiff and straw-like after a few uses.
